Best way to set up external data source for pivot table?

I am required to set up a pivot table based on a chosen .csv file. I have it now set up through Microsoft Query following the steps layed out at https://www.youtube.com/watch?v=wOEWi4dqvl8. However, unlike in the video, I have a folder with multiple data files named yyyymmdd-report.csv

Now I can't seem to change which .csv it should read from. How should I best approach this? I would like to have the flexibility to choose whichever .csv datafile, and not need to rename it to the same as the original. The format of the different datafiles are the same - just varying in number of rows.
