Automatically Populate Monthly Staff Schedule from Weekly Schedule Data

I manually complete 4 or 5 sheets (some months include 4 weeks, some months stretch to 5 weeks) of weekly staff schedules but want this data to be transposed automatically to a new sheet which will provide an overview of the weekly sheets on a single sheet.

This is a screen capture of one my "weekly sheets" which I input manually:

And this is the "monthly overview" which I want to be completed automatically based on the data in the weekly sheets:

Excel Facts

Is there a shortcut key for strikethrough?
Ctrl+S is used for Save. Ctrl+5 is used for Strikethrough. Why Ctrl+5? When you use hashmarks to count |||| is 4, strike through to mean 5.
Sorry this is a very basic question but I'm struggling with even which function I should use.

If anyone is able to even recommend the best function for solving this problem then just a little push off in the right direction for me would greatly appreciated. :)

NB: There is no code in any of the relevant cells, all of the data has been entered manually.
