Auto Correct or Auto Formatting Data Into Date Format

Is there a way to permanently turn off automatic formatting on Excel 2007?

Here is my common scenario:

I have to open CSV tables with Excel 2007 on a daily basis. I have a part number that is 10-1 and when Excel opens the CSV it always changes it to "Oct-1" which causes me repetative work (which is reformatting the cells back to text, then re-entering 10-1).

Is there a way for me to tell my copy of Excel to stop doing this re-formatting? If so, please give me very detailed step-by-step instructions.
