Analyse daily and weekly sales by categories

I need to analyse sales over a period of time, by recording daily numbers of sales over several categories. The analysis is an ongoing exercise, and I want to be able to see sales by category and by days of the week, e.g. X number of apples sold on Fridays, and Y number of Figs every Monday. (All will become clear when viewing the file.)

I have a feeling this requires either V-lookup or index-linking, both of which are way beyond my capabilities.

Please can someone suggest a solution? I've uploaded an example to:

Excel Facts

Repeat Last Command
Pressing F4 adds dollar signs when editing a formula. When not editing, F4 repeats last command.
Thanks, azumi. That looks fine for the data already on the sheet. However, when I add another day and other sales, the weekly analysis doesn't update. Also, I need the top rows frozen, so I guess the sales per day could be on a second sheet?
