Adding a new criteria to a COUNTIFS

I have the following formula:
=COUNTIFS(Tracking!U:U,"R",Tracking!A:A,A5,Tracking!AA:AA,"<>Invoiced")

I need to add in the criteria to only count if the date in column Tracking!S:S has passed.

what date has passed ?
Today() or a cell with a date in as a criteria

add

Tracking!S:S, " < ="&today()

OR


Tracking!S:S, " < ="&datevalue("DD/MM/YY")
