Adding a custom percentage column to pivot, but keep the original counts

Hello, all!

This is likely a remedial question, but I just can't seem to figure it out.

I would simply like to have a custom column / formula on my pivot which is a percentage of one column divided by the sum of the others.

This would be in addition to the existing columns.
The other columns should remain as they are.

When I try to do this with a right-click "Show Values As", it obviously doesn't add a column, just changes the existing ones (and all of them, it seems).

When I attempt to apply a Calculated Field from Fields, Items & Sets, it seems I don't know enough - I do not see the column/field/values to build my formula.

Here is a very simple mock-up of what I want, with my desired formula "Sold"/"Grand Total" outside the pivot (though I'd love to learn how to add more than just this single one).

And here is a simplified mock-up of my data, in case it matters:

I appreciate any help! Thank you so much!
