No table should have a field that is dependent on other fields for it's values, I don't even think it's possible in Access to do so. If you wish to have a field that calculates a value then you should create a query that displays that data.

Try as I might, I cannot get Access to save a table that has an aggregate function as a default value. Even my Access bible, the Access 2000 Developers Handbook does not seem to allow for it.
I tried =SUM(value1-value2), just SUM(value1-value2), =(value1-value2) and (value1-value2), but no go!
I think you will have to view such a table as a query.
