Non-Volatile Date

HELP!(Please)
How can I convert an automatically generated date ("=today()") to a non volatile text string of the same date, so that when the file is opened at a later date the original date is shown?
This is for dating "date created" info on the spreadsheet. Any assistance greatly appreciated!
