Make symbols show in a header?

I'm trying to get an ampersand to show in a document header. It does not appear when printed, presumably because it's a symbol. Is there any way to force it? I know in Lotus you could reference a cell in the document, and its contents would show in the header, using a backslash and the cell address. Is this somehow possible in Excel?
