simple problem with functions

why is it that when I write a function to simply copy the contents from one cell to another, it works for numbers but only displays the function in the cell when trying to do the same thing with text.

Because you can't enter a formula (an expect it to
evaluate) into a cell that's already formatted as
text...

So what would suggest doing in order to copy the text of one cell in a worksheet to another cell in a different worksheet

No. Use Copy, Paste Special... All and
click the Paste Links button.
